The Bianchetto truffle (Tuber Borchii Vitt), is a top quality truffle in Tuscany and grows up from January trough March in broad-leaved woods and coniferous forests or in calcareous earth. It has its own peculiarity, it is irregular, smooth, whitish, and becomes darker when mature. What makes the difference between this truffle and the white one is its peculiar smell which from pleasant and delicate at the beginning will change into an intense perfume of garlic when older.
